I tend to stick with sours and darker beers, and don't often brew IPAs, but over the last few years I have been playing around with a *really* unique, and super special yeast called Metschnikowia Reukaufii, and I just can't resist! It's a nectar specialist yeast which was isolated from wild flowers where it usually ferments nectar and performs complex biotransformation reactions to make the flower's aromatic compounds more attractive to bees.
